Thirty minute chicken


This is a really simple and quick dish that keeps the chicken moist and tender enough to cut with a fork. There is no measuring as most of the ingredients are prepackaged.

In a casserole dish that large enough for 1 to 1.5 pounds of chicken, place equal amounts of lemon juice and melted butter, enough to cover the bottom of the dish. Remove excess fat from the chicken and cut into serving size pieces. Place the chicken in the dish and then turn over so both sides have a coating of lemon and butter. With a rolling pin, crush an entire box or bag of croutons. This will be the breading so choose a flavor you like. Pour the crushed croutons over the chicken to cover completely. Add Italian seasoning on top. Bake 30 minutes at 350. The breading keeps the moisture in and the lemon tenderizes the chicken.

I usually serve this with rice and a steamed green vegetable. Here’s a preparation tip: Crush the croutons in the bag they came in. Just poke a small hole to let the air out. Common substations: Margarine for butter, lime for lemon.
